Enzymatic methods offer a unique system of benefits: are fast, use common reagents and laboratory equipment, are easy to use and give reference results.  The enzyme reagents can be used to analyze food samples and other non-food samples, e.g. paper, pharmaceutical products.

These are the reasons why the enzymatic methods are now part of national laws and European regulations.
